Very Simple Spelt Bread


I am so Excited about the Possibilities with this Bread Recipe!
I had this mixed & in the oven in probably 10 minutes ToPS!

I was looking for a recipe for spelt flour.

If you aren't familiar with spelt, it is as healthy or healthier than whole wheat flour. The nice thing about Spelt, is that is a lot lighter than wheat flour & can be used more like a white flour!


Anyway, I did not have enough spelt, so I used 1/2 spelt & 1/2 bread flour. This is the absolute easiest bread ever.


This is how I made it tonight, using what I had, then I will post the actual recipe.


2 c. spelt flour

2 c. bread flour

1/4 t. salt

1 t. baking soda

1 T. honey

2 1/8 c. milk


Mix this together with a spatula. It was still kind of moist, not able to be kneaded. Greased a round baking pan. Dumped the "dough" in. Smoothed it a bit with my spatula & put it in the oven at 350 degrees. My oven was not even pre-heated yet. Baked it for 40 min. Took it out & rubbed butter on top.


Waited a 1/2 hour while I gave the kids baths. Sliced it with my electric knife & made toasted ham & cheese with it. WOW!! It was a hit. Was crusty around the edges, which made it sooooo yummy!


Seriously, this was SOooo Easy! I will post the actual recipe, then you can click it & see the other reviews. You can add cinnamon & raisins to the dough too if you want. That would be delicious toasted for breakfast!





Ingredients
8 cups spelt flour
1/2 cup sesame seeds
1/2 teaspoon salt, or to taste
1 tablespoon blackstrap molasses
2 teaspoons baking soda
4 1/4 cups milk
Directions
Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pans.
In a large bowl, mix together the spelt flour, sesame seeds, salt, molasses, baking soda and milk until well blended. Divide the batter evenly between the prepared pans.
Bake for 1 hour and 10 minutes in the preheated oven, or until golden. Placing a tin of the same size over the top of the loaf while baking gives it a lovely crust.

Spinach Farafelle Casserole

Found this online & tweaked it quite a bit. Very Good I thought!

Ingredients
1 1/2 lb. ground beef
2 1/2 c. favorite spaghetti sauce
1 cup sour cream
1 6 serving pkg. farfalle (bow tie) pasta, uncooked
1 (16 ounce) package frozen chopped spinach, thawed and drained
1 cup shredded mozzarella cheese
Parmesan Cheese
Onion powder
Garlic powder
Herbamare Seasoning (opt.)
Salt
Italian Seasoning

Directions
Preheat the oven to 350 degrees F (175 degrees C).
Bring a pan of lightly salted water to a boil. Add the pasta, and cook until tender, about 8 minutes.
Crumble ground beef into a skillet over medium-high heat. Add onion & garlic if you have. Cook, stirring constantly until evenly browned. Drain excess grease, and stir in the tomato sauce, sour cream and seasonings. I use a lot of everything, except the Italian Seasoning, I just use a nice sprinkling. A lot of Herbamare is really good. I taste this after I have it mixed good & add more if necessary. The noodles take a lot of the seasoning, so you want to make it a little saltier/tastier than normal.
Place the cooked pasta into the bottom of a 2 quart casserole dish. Pour the ground beef mixture over the pasta. Cover with a layer of spinach. Stir together. Sprinkle with Parmesan (I use the shredded) Top with shredded mozarella cheese.
Bake for 30 minutes in the preheated oven, until heated through and lightly browned on the top.
I had some homemade spaghetti sauce I made this summer & it was so Yummy!
Served this with Mushrooms fried in Butter & Homemade Garlic Bread. Mmmmmm.
Use less Spinach if you think your family might fuss about the spinach. You also want to add more spaghetti sauce if need be. You want it to be pretty juicy, cause the noodles absorb a lot of the juice.

Hero Major Ed Freeman





You're a 19 year old kid.


You're critically wounded and dying in the jungle in the Ia Drang Valley. November 11, 1965.

Your infantry unit is outnumbered 8-1 and the enemy fire is so intense, from 100 or 200 yards away,


that your own Infantry Commander has ordered the MediVac helicopters to stop coming in.




You're lying there, listening to the enemy machine guns and you know you're not getting out. Your family is half way around the world, 12,000 miles away, and you'll never see them again.




As the world starts to fade in and out, you know this is the day.


Then - over the machine gun noise - you faintly hear that sound of a helicopter.


You look up to see an unarmed Huey.


But ... it doesn't seem real because no Medi-Vac markings are on it.


Ed Freeman is coming for you.


He's not Medi-Vac so it's not his job, but he's flying his Huey down into the machine gun fire anyway.


Even after the Medi-Vacs were ordered not to come.


He's coming anyway.


And he drops it in and sits there in the machine gun fire,


as they load 2 or 3 of you on board.


Then he flies you up and out through the gunfire to the doctors and nurses.


And, he kept coming back!! 13 more times!!


He took about 30 of you and your buddies out who would never have gotten out.




Medal of Honor Recipient, Ed Freeman, died last Wednesday at the age of 80, in Boise , Idaho .


May God Rest His Soul.






I bet you didn't hear about this hero's passing,


but we've sure seen a whole bunch about Michael Jackson. . ..

Newest Soup Recipe! :-)


Rob came home early today to take our BullMastiff, Abbie, to get an x-ray to know how many puppies she will be having. YEAH!


Anyway, we were just sitting down to lunch. After tasting my "chili", he said, "WOW, this is really good!" I had to laugh & said "Don't count on having it again, 'cause I just threw in what I had on hand."


Thought I'd post the recipe for you to "enjoy". :-)


"Deanna's Conglomeration Chili"


about a 1lb. of leftover sloppy joe meat

25 oz. of tomato soup

28 oz. can of Kroger baked beans

10.5 oz. can of Hot dog chili sauce(been trying to get rid of it, but didn't know how:-)

14.5 oz. Aldi Diced tomatoes & Green Chilies

1 pkt. of chili seasoning mix

a shaking of:

chili powder

salt

onion salt

garlic powder

Smoke flavoring

and 1 Tbs. of Bragg's vinegar


We all really liked it, but it was quite spicy! Very good, served it with my "Old-Fashioned Cornbread" once again.

Our Favorite Soup Recipes

My favorite easiest Soup is

"Miranda's Taco Soup"
2 lb.(deer:-)this is not Miranda's version.-) burger
1 sm. onion
1 pkg. taco seasoning
2 cans of beans (undrained)
1 pkg. of Ranch
2 cans of diced Tomatoes
1 can Ro-Tel(tomatoes with chilies)
water

I fry my meat with the onion & season like I would taco meat.Then just dump in the rest. I use whatever variation of items I have on hand. Beans (pinto, kidney, chili, black). I have put liquid Ranch rather than pkt. if I don't have as well.
Add water to the desired "soupiness."
Can serve with shredded cheese and sour cream if you don't mind the extra fat content. ;-)
I also like to put the "Old Fashioned Cornbread" recipe I have on my blog with it.
"Kristal's Cabbage Soup"
I'll be honest when I first was served this I thought it sounded :-/, but it is Delicious & one of our very favorites!
1 lb. fried burger
1 large cabbage
2 cans of diced or stewed tomatoes
2 cubes of beef boullion
1 large can of tomato juice
2 cans of chili beans (kidney or black beans can be used too)
celery (I use celery salt, but you can use the real thing:-)
garlic powder
parsley
salt
pepper
cayenne pepper
Cut up your cabbage into chunks. Put everything in your soup pot to boil your cabbage in, except for the beans, tomatoes & burger.
I just add the seasonings to taste. You need a good amt. of each.
Once the cabbage is soft, then add the rest of the ingred. until hot. Letting it sit & simmer gets the flavor through good, but not necessary if you are in a hurry.
I have made extra & frozen it & it is still delicious months later.
Cornbread is good with this too!
"Cynthia's Yummy Ham & Bean Soup"
We like to make this with leftover ham from Thanksgiving or Christmas Dinner.
Ham Bone
Ham
Diced Potatoes
Green Beans
Milk
Water
Worcestershire
Butter
Salt
Pepper
If you have a ham bone & can cook your potatoes & green beans with the bone it is best. I like to save my ham pieces until the last 1/2 hour so that it doesn't cook the flavor out of the ham.

I put this in a crock pot in the morning on low.
You want to add 2-3T of butter & a good bit of Worcestershire sauce.
Don't add the Milk & Ham until the very end, just enough to get them warm.
Also, you don't want to add too much water, because you are going to be adding milk later.
Sorry, I don't have measurements on this, I just add what looks good.
Taste your water after seasoning & you can tell if you need to add more seasoning.
I often taste my water throughout the day too because the veggies will "eat" some of your seasonings, so you might need more.
This really is Easy & Very good!
"Mom's Broccoli-Cheese Soup"
2 cup chicken
2 cup chicken broth
6 c. water
6 chicken boullion cubes
2o oz. of frozen or fresh broccoli
8 oz. fine egg noodles
1 lb. velveeta cheese
6 cups of milk
Salt
Pepper
Don't add the cheese & milk until the very end right before you serve. (Just heat the dairy until it is hot).
This was our Favorite growing up & we liked it when she served it when the velveeta wasn't all melted into the soup. Getting a spoonful with some softened velveeta on it is the BEST! :-)
